Pad Thai | The Recipe that Broke my Instagram Account

Okay you need to make this recipe ASAP. Especially because you are most likely feeling deprived from your Thai takeout (like us) & you need your fix. We are shocked how close this tastes to the real thing, maybe even better. So many of you have already made this & that makes us so happy!

I would say it’s a recipe you want to take your time to make – make it a date night like we do! Every week we make sure we dedicate a night to cook together in the kitchen. Angelo puts on a playlist, makes us a special cocktail or opens up a bottle of wine, I prep the kitchen by taking out the pans, knives, bowls & ingredients we need. Then we chop, cook & catch up.

We broke up this recipe by Angelo chopping all the veggies & I made the sauce, whisked the eggs & cooked the noodles. Once all the ingredients we’re prepped we started cooking. Once you start cooking it goes by very quickly & your meal is done is about 10 minutes I would say? Give or take. So prep the goods! It’ll make cooking this dish easier.

And then enjoy on the couch in your cozies by candle light & watch a new film & you have a perfect date night at home. <3

Homemade Pad Thai Recipe

Ingredients

Recipe by Tasty  for 4 servings

  • 8 oz pad thai noodle, or noodles of your choice
  • 2 tablespoons sesame oil, divided
  • 2 eggs
  • 1 chicken breast, diced
  • ¼ cup shallot
  • ¾ cup pad thai sauce, we used 2 tablespoons each of fish sauce, rice vinegar, soy sauce, brown sugar (we used regular sugar), lime juice, and sriracha (do less sriracha if you don’t love spice. It’s on the spicy side!)
  • 1 cup bean sprout
  • ½ cup peanuts, crushed, plus more for garnish
  • ¼ cup green onion, plus more for garnish
  • ¼ cup fresh cilantro, plus more for garnish

Preparation

  1. Cook the noodles according to the package instructions. We use these noodles.
  2. Toss with 1 tablespoon of sesame oil and set aside.
  3. Add ½ teaspoon of sesame oil to a pot with the lightly beaten eggs. When the eggs are finished cooking, set aside.
  4. Pour the remaining ½ tablespoon of sesame oil into the pot and add the diced chicken breast. Cook until no longer pink in the middle, then set aside.
  5. Add the shallots to the pot and cook until lightly browned and fragrant. Then, add the noodles, eggs, and chicken back into the pot.
  6. Pour in the pad Thai sauce and toss to coat.
  7. Top with the bean sprouts, crushed peanuts, green onions, and cilantro, and stir until well blended.
  8. Dish up and garnish with extra peanuts, green onions, and cilantro.
  9. Enjoy!
